Celebrate Australia Day with my secret Corn Recipe...

CORN STEAMED IN BEER
Serves 12

1 dozen ears of fresh corn (with husks)
2 bottles of beer
Maldon salt
Freshly ground pepper Melted butter (optional)

• Gently pull back green husks without removing them from the stem and discard inner white corn silks.
• Loosely fold husks back over corn.
• Place all ears of corn in deep saucepan large enough for corn to stand upright.
• Pour both bottles of beer over corn.
• Place lid on pan, bring to the boil and simmer for 10 minutes.
• Place steamed corn on a serving platter and when cool enough to handle, pull back green husks and tie in a large knot – the knot gives it a good presentation and can be used as a ‘handle’ to hold corn.
• Sprinkle with Maldon salt & freshly grated pepper and brush with melted butter.

The corn will be plump, juicy and sweet...
